Pin ItPasta Carbonara
Ingredients
- 1 pound bacon
- 1 pound fettuccine or spaghetti
- 1/4 cup unsalted butter, room temperature
- 4 eggs, room temperature
- 1/4 cup whipping cream, room temperature
- 1 ½ cups Parmesan cheese, grated and divided
- 1 ½ tablespoons parsley
- salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees Fahrenheit and prepare a 9x13-inch baking dish by spraying it with cooking spray.
- Cook the bacon until it's just crispy and chop it into pieces. Drain grease from bacon and chop into bits.
- Cook the pasta according to the package directions until it's al dente and drain. place the cooked pasta into the prepared baking dish and toss with the butter.
- In a bowl, beat together eggs and cream until just combined. Pour egg mixture over the buttered pasta and toss until pasta is well coated.
- Reserving some of the bacon bits for the top of the dish, add bacon, 1 cup of cheese, parsley, and salt and pepper to the pan, and mix everything together.
- Bake for 10-12 minutes to cook eggs completely.
- Remove from the oven and top with the remaining ½ cup of cheese, remaining bacon bits, and additional parsley. Serve fresh!

I use to get Pasta Carbonara at a restaurant near me. It had mushroom and English peas in it. Loved the mushrooms, but hate peas so I would always push them to the side.
I added sliced black olives and sliced mushrooms. It was already a great casserole and this just tweeked it a little.
