Are you guys ready for some amazingly easy meals this week? It is our first week back to school this coming week and I am all about quick and delicious meals. I love having a home cooked meal and being able to sit down at the dinner table and talk about our days and tell jokes. But I know that with the start of school withย homework, sports, piano, etc. etc. it starts to consume our lives.

So today I am bringing you an easy one pan meal that will blow your family away! Not only is it easy to make and throw everything in one pan, the flavor it OUT OF THIS WORLD.

The chicken gets coated in an amazing parmesan garlic crumb coating. But the crispy coating doesn’t stop there. The fresh vegetables also get tossed in the same flavorful crumb mixture.

You guys. My family could have this meal every week for the rest of our lives and we wouldn’t get tired of it!

One Pan Crispy Parmesan Garlic Chicken with Vegetables will be one of the best one pan meals you ever make. The tender and juicy baked chicken have the best crispy parmesan garlic coating and the veggies are full of amazing flavor!

Ingredients 

Instructions 

  • Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray.
  • Season 4 boneless skinless chicken breasts with salt and pepper on both sides and set aside.
  • In a shallow dish add 4 tablespoons unsalted melted butter. In another shallow dish add ยฝ cup Italian bread crumbs, ยฝ cup grated parmesan cheese, and ยฝ teaspoon garlic powder.
  • Dip each chicken piece into the melted butter and then coat in the parmesan garlic crumbs. Lay the coated chicken in the prepared baking dish.
  • In a medium-sized bowl add 1 medium sliced zucchini, 1 medium sliced yellow squash, andยฝ pound quartered baby red potatoes. Toss the vegetables in 2 tablespoons olive oil then add the vegetables to the baking dish.
  • Bake for 30-40 minutes until chicken is cooked throughout and vegetables are tender.

  1. I used whole wheat bread and Italian season with garlic powder ,also used golden potatoes in small chunks.had to cook it a little longer, potatoes did not get done in 30 minutes. This was definitely a keeper recipe! I loved the FLAVOR, and the moist chicken, even after cooking it a little longer! Hubby wants to be sure i do not loose the recipe! Lol

    I discovered I was out of potatoes, so I sweet potatoes instead. Peeled and sliced them. They were so good. Nice change.

    I followed the recipe but used panko bread crumbs and added Italian seasoning and garlic salt! So good! I left mine in for 40 minutes! It was quick easy and flavorful!

    So so good. If you want a extra boost in flavor add the Italian seasoning packet on to your chicken.. yummmmmmmmyyyyy
