I have been a huge fan and follower of Our Best Bites even before I started a blog. They have such amazing ย family friendly recipes and cookbooks. Sara has such an inspirational story of losing 50 pounds! {You can read all about her story here.} ย She looks amazing!! And if you have been following along I started my weight loss journey last December. I loved hearing about her weight loss story and ourย plans were both similar to losing weight.

I had to lose my baby weight. I was miserable and wanted to feel like myself again. Since December I have lost ย all baby weight (close to 30 pounds) and maintained the same weight now for 5 months. A huge part has been keeping active by doing Crossfit 4 times a week and logging in all of my food with My Fitness Pal. I also check in with the nutritionist at the gym weekly to keep me on track.

People ask me what I eat. I eat real food. You don’t have to sacrifice on taste to lose weight. Portion control and adding in whole grains has been huge for me. I also reward myself with a cheat meal each week. So I am totally eating those recent brownies and everything that goes up on the blog here.

I was ecstatic about this new cookbook because I could add in some more healthy dinner options that don’t compromise on taste and help me to maintain a healthy lifestyle. And it is important to keep healthy recipes throughout the year. Especially during summer and swim suit season. ๐Ÿ™‚

Herbed Lemon Garlic Chicken Skewers

Ingredients 

Marinade

Skewers

  • 2 ยฝ cups sliced zucchini, about 2 medium zucchini cut into ยฝ-inch slices
  • 1 cup red bell pepper, about 1 large bell pepper cut into ยพ inch squares
  • 1 ยฝ cup largely diced red onion, about 1 large red onion cut into wedges and then 3/4 inch squares
  • 1 ยผ pounds boneless skinless chicken breasts, cut into 1 inch cubes

Instructions 

  • Prepare the marinade by adding 1 ยฝ tablespoons minced garlic, 1 tablespoon fresh lemon zest, 4 tablespoons fresh lemon juice, 3 tablespoons minced fresh rosemary, 3 tablespoons minced fresh basil, 2 tablespoons minced fresh oregano, 1 teaspoon salt, ยผ teaspoon ground black pepper, and 4 tablespoons extra virgin olive oil to a small bowl and mix to combine. Set aside.
  • Place 2 ยฝ cups sliced zucchini, 1 cup red bell pepper, and 1 ยฝ cup largely diced red onion, in a large ziplock bag and add 3 tablespoons of the marinade. Close the bag tightly and shake until all of the vegetables are coated.
  • Place 1 ยผ pounds boneless skinless chicken breasts, in a separate large ziplock bag and add the remaining marinade. Close the bag tightly and shake until the chicken is evenly coated in the marinade. Place the chicken and vegetables in the refrigerator to marinate for at least 30 minutes, or up to 6 hours.
  • Once the marinated, preheat the grill to medium heat. Thread the skewers, alternating the chicken and vegetables. Season lightly with salt and pepper.
  • Grill the skewers for about 12 minutes, until the chicken reaches 165 degrees Fahrenheit in the thickest part. Flip the skewers every 2-3 minutes as they cook. Squeeze the skewers with fresh lemon juice and serve with lemon wedges, if desired.

  2. Great recipe! Made it over the weekend for a lunch BBQ and it was perfect! Wouldn’t change a thing. I had some eggplant from the garden so I added that and it was a great addition.
