Hi, it’s Jenn, fromย Eat Cake For Dinner. How do you guys feel about quinoa? I love it. It’s so good for you and I am trying it in more and more dishes all the time. Myย Cheesy, Chicken, Broccoli and Quinoa Casseroleย is one of my family’s favorite meals and I decided that I needed another version to add to the menu. I feel like I am being healthy when I eat this, but it doesn’t taste healthy. It’s thick and creamy and very filling. Sure, it has some shredded cheese in there, but look at everything else, quinoa, red pepper, artichokes, spinach, chicken and Greek yogurt.
There is a little prep involved, but once everything is chopped, the cooking part is super fast. My cute little niece helped me cook this and she kept saying . . . it smells so good.

Ingredients
- ยฝ cup uncooked quinoa
- 1 tablespoon unsalted butter
- 2 tablespoons all-purpose flour
- โ cup finely chopped red bell pepper
- 1 cup roughly chopped artichoke hearts
- 2 cups roughly chopped fresh spinach
- 1 ยพ cups milk
- 1 teaspoon chicken bouillon powder
- ยพ teaspoon Italian seasoning
- ยพ teaspoon onion powder
- ยฝ teaspoon garlic powder
- black pepper, to taste
- ยผ cup plain Greek yogurt
- 1 ยฝ - 2 cup shredded cooked chicken, rotisserie works great
- ยพ cup shredded Italian cheese blend
Topping
- ยฝ cup Panko bread crumbs
- ยฝ teaspoon dried parsley
- ยฝ teaspoon garlic seasoning, or ยผ teaspoon garlic powder
- 1 tablespoon melted butter
Instructions
- Cook ยฝ cup uncooked quinoa according to package directions and set aside.
- Meanwhile, melt 1 tablespoon unsalted butter in a large, oven-safe, skillet over medium heat. Add โ cup finely chopped red bell pepper, 1 cup roughly chopped artichoke hearts, and 2 cups roughly chopped fresh spinach. Cook for a few minutes until the spinach is wilted.
- Stir in 2 tablespoons all-purpose flour and cook for a few minutes, stirring frequently. Gradually whisk in 1 ยพ cups milk. Add 1 teaspoon chicken bouillon powder, ยพ teaspoon Italian seasoning, ยพ teaspoon onion powder, ยฝ teaspoon garlic powder, and black pepper, to taste. Stir until well combined.
- Cook until thickened and creamy, stirring occasionally. Stir in ยผ cup plain Greek yogurt, 1 ยฝ - 2 cup shredded cooked chicken, ยพ cup shredded Italian cheese blend, and cooked quinoa. Stir until combined and the cheese is melted.
- Mix together ยฝ cup Panko bread crumbs,ยฝ teaspoon dried parsley, ยฝ teaspoon garlic seasoning, and 1 tablespoon melted butter. Sprinkle the breadcrumb mixture on top.
- Place in the oven and broil for a few minutes or until bread crumbs are toasted. Remove from oven and serve. Serves 3-4.
