Chicken and Apple Salad with a Honey Dijon Vinaigrette is the perfect fall salad full of crisp apples, cranberries, crunchy pecans and bleu cheese. This salad is easy to put together and so mouthwatering!
Hey everyone! Chelsea back from Chelsea’s Messy Apron! I’ve got a delicious Fall salad for you all chuck full of delicious ingredients! You’ll be craving this ALL fall and winter long ๐
And the best part is its super easy! I use rotisserie chicken to cut down on effort and add a mega boost of flavor. The dressing is just shaking a few ingredients together in a jar and that’s it. This salad can be ready super quick and yet present an impressive dish!
If you want to add more pizzaz to this salad you can easily candy the pecans. I roast them, but candied pecans are admittedly my favorite way to top this salad.

Ingredients
- 1 cooked and seasoned chicken breast
- 2-3 small apples
- 8 ounces spring lettuce mix
- 1 tablespoon lemon juice
- โ cup roasted pecans
- โ cup dried cranberries
- ยผ cup crumbled bleu cheese
Honey Dijon Vinaigrette
- 1 clove garlic
- 1 shallot
- ยฝ cup olive oil
- ยผ cup balsamic vinegar
- 1 ยฝ teaspoons honey
- 1 teaspoon Dijon mustard
- salt and pepper to taste
Instructions
- Prepare the 1 cooked and seasoned chicken breast for the salad by chopping it into bite-sized pieces.
- Slice the 2-3 small apples into thin slices, and toss the slices with 1 tablespoon lemon juice.
- In a large bowl add the 8 ounces spring lettuce mix, chicken, apples, โ cup roasted pecans, โ cup dried cranberries, and ยผ cup crumbled bleu cheese.
Honey Dijon Vinaigrette
- Finely mince the 1 clove garlic and 1 shallot and add them to a bowl.
- To the same bowl add the ยฝ cup olive oil, ยผ cup balsamic vinegar, 1 ยฝ teaspoons honey, 1 teaspoon Dijon mustard, and salt and pepper to taste, and whisk to mix well.
- Pour the dressing over the salad, toss the salad to mix well and enjoy!

Is there another cheese to use other then Blue cheese? I don’t like Blue cheese or Feta cheese?
This looks really good. I always forget I can put meat on salad.
I don’t know why anybody would buy vinaigrette full of preservatives when it’s so easy to make. And a little thing can make it very different, like your addition of honey here. Better than having a fridge door full of different bottles!
