Hey hey it’s Tiffany from Creme de la Crumb! It’s no secret I’m a little bit obsessed with my slow cooker – or I should say slow cookers because I think I have five of them??? I just got a new one for Christmas and I’m so excited about it, I use my slow cookers several times a week and when we are having a family get together I usually have a few in use at the same time.

This is a great go-to weeknight staple dish. I love the flavors, it’s really healthy, and I never get tired of chicken or potatoes. The best part? It’s chicken AND potatoes made in one dish at the same time. It’s awesome! Even picky eaters are a fan of this simple crockpot meal. I hope you enjoy it as much as my family does!

Slow Cooker Herbed Chicken & Potatoes

Ingredients 

Instructions 

  • In a large bowl combine 1ยฝ pounds boneless skinless chicken breasts and 3 cups chopped 1 1/2 inch potatoes. Drizzle with 3 tablespoons oil and stir to coat. Sprinkle 1 tablespoon italian seasoning, 1 teaspoon garlic powder, and salt and pepper to taste, then toss to coat well.
  • Transfer to 6 quart slow cooker. Cover and cook on low for 4-6 hours until chicken is cooked through and potatoes are fork tender.
  • Sprinkle fresh herbs for garnish, like oregano, and thyme, and serve.

    Very good. Any recipe with no leftovers is a win double points if folks want seconds. I used chicken strips instead of whole chicken breast plus added 1/2c chicken broth. Came out a little dry so next time will add more broth.

  2. Sounds good. I’m making it later but I would like to know if you have a similar recipe with chicken tenderloins.

    1. You can! They might need a little extra time to cook. Make sure the internal temperature of the chicken is 165 degrees Fahrenheit before eating the chicken.

    1. Although Iโ€™ve never tried it, Iโ€™m sure you could! The potatoes may need some liquid, I would suggest adding about 1 cup of broth or water to the pot and cooking at high pressure for 15-20 min. Let me know how it turns out!

    1. I’m sorry! I’m not sure why that would have happened to you! Did you try browning the chicken and potatoes before? Maybe that would help!

    Made this last night and it was lovely, so easy to make and a nice change to the usual chicken meals

  4. I made this for dinner tonight and it smelled so good.. Butโ€”-about half way through I had to add maybe a cup of chicken broth as potatoes were sticking to the crockpot and chicken looked dry. I should have read the comments. After another couple of hours it was done and delicious. I will make it again.

    Yum! I followed the recipe and no need to add chicken broth or a liquid base. Very moist and tender chicken. I slow cooked for 5 hours because the potatoes were not cooked perfectly yet. I Love this Recipe! I will definitely make again.
