Hi, it’s Jenn, fromย Eat Cake For Dinner. Happy March!! Spring is only a week and a half away and good thing, because one taste of these muffins will have you ready for warmer weather. You can never have too many banana recipes on hand, am I right? These muffins are so unique and extremely delicious.

The combo of the orange and banana reminds me of a warm Spring or Summer Day. It’s like the bright refreshing flavors of a smoothie inside a muffin. Even with a whole cup of mashed bananas, the banana flavor does not overpower these muffins. They are really really delicious and a new favorite. They bake up with a pretty dome on top and are completely impossible to resist, especially with the orange citrus glaze on top.

Banana Poppy Seed Muffins with Orange Glaze

A delicious banana muffin full of citrus flavor and topped with an orange citrus glaze.

  • 1 muffin pan

Ingredients 

Orange Glaze

Instructions 

  • Preheat the oven to 375 degrees Fahrenheit. Line a 12-cup muffin pan with muffin liners, spray lightly with nonstick cooking spray, and set aside.
  • In a large bowl, combine 2 cups all-purpose flour, 1 ยฝ tablespoons poppy seeds, 2 teaspoons baking powder, and ยฝ teaspoon salt.
  • In a medium bowl, whisk together 1 cup mashed ripe banana, 1 large egg, ยพ cup granulated sugar, ยผ cup vegetable oil, 1 tablespoon orange zest, and 1 teaspoon vanilla extract. Add the wet ingredients to the dry and stir together until just combined.
  • Add the banana mixture to the flour mixture and mix until just combined. Scoop the batter into the prepared muffin pan until each well is ยพ of the way full.
  • Bake for 18 minutes, or until a toothpick comes out clean from the center of the muffins.

Orange Glaze

  • Add 1 cup powdered sugar, 2 tablespoons fresh orange juice, 1 teaspoon orange zest, and 1 teaspoon vanilla extract to a medium bowl and whisk until smooth. Add more orange juice 1 teapoon at a time as needed until the desired consistency is reached.
  • Brush or drizzle the glaze over the cooled muffins. Let the glaze sit on the muffins for 20 minutes or so before serving.

  3. I absolutely loved this recipe. I decided to try it cause it has an orange twist. Frankly speaking, I don’t like banana bread or muffins but I thought I would give a try. The most convicting fact was orange. I hoped it would ‘kill’ a banana smell. And it did!!! Which was what I expected. The only thing I will change in future – I will use less flour, maybe 1 and 3/4 cups. I can say it’s a perfect recipe if you have bananas you don’t want to eat))
